I wanted to post comments on other blog spots, but it wouldn't let me do it unless I had a blog of my own, so here I go. I don't honestly know if I'll use this regularly or not; we'll have to see.

I didn't want to post on your deram post or your other post. The Ultreya seemed safer. I mean I did take training in dream analyisis in my therapy training as a Licensed Counselor, but that wasn't the purpose of this post.

The Chess Pie simply defined, this unique southern dish is in one recipe version a pecan-less Pecan Pie.

The recipe I used is older and more southern and akin (distantly) to an Irish Curd Pie or an English Lemon-Curd Pie (without the lemon).

Many people have made suggestions as to where the name Chess in Chess Pie came from. Some say early settlers and early english spelled cheese with one "e" (Ches). Some say it came from the term "Pie Chest", a storage place for the pies. Still other say it came from the term when someone asked what it was, it was "jes pie".


Because I don't have your e-mail (or I couldn't find it) address, Write me at fdeaton@jscc.edu and I'll send you the recipe. Its real easy to make. I'll bet Fr Brian has had one!

The recipe I followed uses cheese, but most chess pies only use lots of eggs and sugar with a touch of heavy cream.

Ahhhhh, it's all so clear now.... I was wondering if it had something to do with knights and pawns and such; you know, *that* sort of chess. But why in the world would one want to leave the wonderful pecan out of a pecan pie? I guess I would have to try it, but my pecan-loving self just recoils from such a thought. :^)

Yes, my deams come under a lot of scrutiny by people, once they hear about them. And just think - I even said that the crack dream was *not* a nightmare; gives you something to think about as far as how icky my actual nightmares are. But I figure that if I can have dreams like the one about the Precious Blood, too, that makes up for the bad ones. It was a bit strange to bare my soul, as it were, by posting those dreams, but I am hoping that some good comes of it.

Here is the version I made and I will make for the President's Christmas Party

Memphis' Old downtown cafeteria, BRITLING CHESS PIE, as printed in the Commercial Appeal in 1994

INGREDIENTS
1 cup grated cheese, 1 cup milk, 5 egg yolks, 1 cup sugar, 1 tbsp. corn meal, 1 tbsp. flour, 2 tbsp. melted margarine, 2 tbsp. whipping cream, 9-inch pie crust, unbaked

DIRECTIONS
Combine grated cheese with milk and heat, but do not boil. Mix egg yolks, sugar, corn meal and flour, stirring to blend, then add to cheese mixture. Add margarine and cream, stirring by hand to mix well.

Pour into a 9-inch unbaked pie crust and bake in preheated oven at 375 about 45 minutes or until a knife inserted near the edge comes out clean. Makes 9 inch pie
